Fancy Blue Corn Pumpkin Waffles Recipe

Happy November and Happy Native American heritage month! I don’t know about you, but I just love all things pumpkin this time of year. One of my favorite ways to incorporate this delicious ingredient is by adding it to all of my favorite foods. If you have followed my blog and/or Instagram for a while, then you know breakfast is my favorite meal of the day. Waffles and pancakes being my favorite sweet breakfast of choice. Today I am excited to share a quick and easy recipe for Fancy Blue Corn Pumpkin Waffles.

For this recipe it also includes another favorite ingredient of mine, blue corn. I think adding the blue corn makes these a little bit healthier and sometimes I like to switch out the all-purpose flour for almond flour. When it comes to waffles, I don’t like a sweet waffle. I like to save the sweetness for the toppings. So just to note, these waffles aren’t super sweet.

Just a few things about this recipe.

  • The batter will be thick. Depending on the size of your Belgian waffle maker, you may end up with more or less waffles. This is the waffle maker I am using https://shopstyle.it/l/bAzQR
  • It’s best to use pure pumpkin puree. If you do use, pumpkin pie filling, omit the pumpkin pie spice.
  • Feel free to switch out the milk for a non-dairy option.
  • Juniper ash is an optional ingredient. It’s used a lot in Navajo cooking. Not only does it give blue corn its distinguishable blue color, it also provides some added nutrients like calcium.

Fancy Blue Corn Pumpkin Waffles Recipe

Yields: 4- 5 large waffles

Ingredients:

  • ½ cup All Purpose Flour
  • 1 cup Blue Corn Meal
  • 2 tsp Baking Powder
  • ½ tsp Juniper Ash (optional)
  • 1 tbsp Granulated Sugar
  • ¼ tsp Salt
  • 1 large Egg
  • ¾ cup milk
  • 4 tbsp Unsalted Butter, melted
  • 4 tbsp Pumpkin Puree
  • 1 tsp Pumpkin Pie Spice
  • Cooking Spray or butter

Optional Ingredients:

  • Maple Syrup
  • Nuts (pecans, almonds, pine nuts…)
  • Whipped Cream

Equipment:

  • 2 large/medium sized bowls
  • Measuring spoons and cups
  • whisk
  • spatula
  • Belgian waffle maker

Directions:

  1. Preheat waffle maker on medium high setting
  2. In a large bowl whisk together all-purpose flour, blue corn meal, baking powder, juniper ash, and salt
  3. In a separate bowl, whisk sugar, egg, melted butter, pumpkin puree, and pumpkin pie spice together
  4. Slowly add wet ingredients to dry ingredients and mix together until smooth
  5. Spray waffle maker with oil and scoop out 1/3 to ½ cup of waffle into waffle maker and cook according to your waffler maker
  6. Carefully remove waffles and serve with maple syrup, nuts, and or whipped cream
