Fancy Blue Corn Waffles Recipe

Hi Friends! Today I am sharing another simple and easy recipe for Fancy Blue Corn Waffles. If you have tried my Fancy Blue Corn Pumpkin Waffles then you are going to love this new recipe!! Typically I reserve Fancy Blue Corn Pumpkin Waffles for the fall, but lately I have been enjoying these Fancy Blue Corn Waffles year round. Breakfast is one of my favorite meals and this recipe incorporates one of my favorite ingredients roasted blue cornmeal.

Not only is it a pretty blue color, but the smell and test are far more fancier than any regular waffle.

If you grew up in the southwest you may be familiar with blue corn waffles. They are definitely a beloved favorite by all, but I didn’t grow up eating blue corn waffles. It was something I came across as I got older and it quickly became a favorite go to breakfast. One of the first times I tried a blue corn waffle was at Tia Betty Blue’s in Albuquerque, NM after seeing friends from social media try the restaurant. To be completely honest it wasn’t that great(I think we came on a bad service day), but I do remember the waffles being a pretty blue color. So I wanted to recreate the recipe at home and OMG is this recipe sooo good!!

I love this recipe because it is so simple! It is so simple, I never really wanted to share the recipe which is why I shared Fancy Blue Corn Pumpkin Waffles first. But after realizing that more of you wanted basic recipes, I was ready to share. 🙂

Fancy Blue Corn waffles can be eaten alone or you can change up the flavors by adding a fun topping. My favorite is a strawberry compote. Paired with Fancy Blue Corn Waffle it is the perfect breakfast or brunch option. This recipe is made for 4 large or 8 mini waffles. You can make these ahead of time and freeze them for later as well. And with all my recipes you can change up the ingredients based on your dietary needs.

Fancy Blue Corn Waffles Recipe

Yields: 4 Large or 8 Mini Waffles

Ingredients:

  • 3/4 cup roasted blue cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp juniper ash (optional)
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1 tbsp granulated sugar
  • 2 tbsp unsalted butter, melted
  • 1 cup, milk
  • 1 large egg
  • 1 tsp vanilla extract
  • Nonstick Spray

Directions:

  1. In a medium sized bowl, mix together dry ingredients, blue cornmeal, all-purpose flour, juniper ash, baking powder, salt, and sugar until thoroughly combined
  2. In a separate bowl mix together wet ingredients, egg, milk, melted butter, and vanilla
  3. Slowly add wet ingredients into dry ingredients and mix until thoroughly combined
  4. Spray waffle maker with nonstick spray and pour in 1/2 cup to 1/4 cup of blue corn waffle batter into waffle maker and cook until waffle maker stops steaming
  5. Top with maple syrup or homemade compote!
