Fancy Sausage & Cheddar Breakfast Sandwich Recipe

Hi Friends!! Today I am partnering with La Brea Bakery to share a recipe for one my favorite breakfast sandwiches, a Fancy Sausage & Cheddar breakfast sandwich on a delicious La Brea Bakery Take & Bake Ciabatta Roll. If you have followed along with me then you know I LOOOOVE breakfast and this breakfast sandwich is in my top 5 favorite breakfast foods. It has everything you would want in a breakfast sandwich, sausage, eggs, bell peppers, cheese, and of course a yummy La Brea Bakery Ciabatta Roll. This recipe is actually a recreation of one of my favorite restaurants dishes and I think we nailed it! So I am excited to share this delicious recipe for a Fancy Sausage & Cheddar breakfast sandwich.

Overall this recipe is pretty simple to make and if you wanted you could cook everything in one pan, kind of like a scramble. But if you are anything like me, I love aesthetics!! So for this recipe I did cook each item separately and then added them back together. I personally like sweet Italian sausage for this recipe but a mild Italian sausage also works as well. For the bell peppers, I chose to do a tri color of red, green, and orange bell peppers. But any one will work the same. For the cheese, you can also use a cup of shredded cheddar cheese instead of the sliced cheese.

But the overall star of this dish is the La Brea Bakery Take and Bake Ciabatta Rolls.

La Brea Bakery is one of my favorite grocery store artisan bread brands. I love the Take and Bake selection, because it makes you feel like you just baked a fresh batch of bread minus all the work! 🙂 You can toast the bread to your liking and I personally like to butter the ciabatta rolls after slicing them in half. It’s sooo good!! They have such a wide selection of breads and I excited to announce I’ll be sharing 2 more recipes using La Brea Bakery Bread. Fancy Sweet Sausage, Pepper, and Cheddar Ciabatta Breakfast Sandwich Recipe

Yields: 4 Sandwiches

Ingredients:

  • 6-8 eggs, large
  • 4 sweet or mild Italian sausage links, diced
  • 1 cup bell peppers, diced
  • 4 slices cheddar cheese
  • ¼ cup sliced scallions
  • 1 package of La Brea Bakery Take & Bake Ciabatta Rolls (4 rolls)
  • 6 tbsp olive oil
  • Salt and Pepper – optional

Directions:

  1. Preheat oven to 375 degrees and place La Brea Bakery Take & Bake Ciabatta Rolls on a baking sheet and set aside
  2. In a medium skillet, cook Italian sausages in 2 tbsp olive oil. Let cool and then dice into ¼ sized pieces
  3. In a medium skillet, sauté bell peppers with 2 tbsp olive oil until bell peppers are soft. Add in scallions and remove from heat.
  4. Place La Brea Bakery Ciabatta Bread in the oven for 5-7 minutes or until top is golden
  5. In a small bowl, crack eggs and scramble together and season with salt and pepper to your likiing
  6. In a medium sized pan, add in 2 tbsp olive oil and pour in eggs and scramble until cooked.  
  7. Remove from heat and add in the cooked sausage, bell pepper, and scallions to the scrambled eggs and mix together
  8. Remove La Brea Bakery Rustic Ciabatta Rolls from oven and carefully cut bread in half and add a slice of cheddar cheese to each bottom piece.
  9. Scoop on sausage and egg mixture onto each bottom piece evenly and then top with bread.
  10. Enjoy!
