Fancy Navajo – Blue Corn Pumpkin Pancakes Recipe

Fall is here which means it is time for everything PUMPKIN SPICE. One way I like to make my fall mornings more fancy is by making Fancy Blue Corn Pumpkin Pancakes. Not only are these pancakes a pretty blue color, but they also taste and smell just like fall. They are the perfect weekend breakfast treat!

If you have leftovers, you can also freeze/refrigerate these and warm them up throughout the week! I love popping them in the toaster for a fun midweek treat with my coffee or tea. But once you have had one, you may not have any leftover.

A few years back I released a recipe for Blue Corn Pumpkin Oat Pancakes that included oat flour which you can find here. I love that recipe, especially if you want to learn how to make your own oat flour. This recipe is a bit simpler to make using a classic pancake recipe. I hope you give them both a try.

Fancy Navajo – Blue Corn Pumpkin Pancakes Recipe

Yields: 8 pancakes

Ingredients:

  • 1/2 cup Roasted Blue Cornmeal
  • 1/2 cup All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tbsp Granulated Sugar
  • 1 tsp Pumpkin Pie Spice
  • 4 tbsp Pumpkin Puree
  • 1 large Egg
  • 1 cup Milk  
  • 1 tbsp butter or nonstick spray

Optional Ingredients:

  • Maple Syrup
  • Nuts (pecans, almonds, pine nuts…)

Equipment:

  • 2 Medium sized bowls
  • Measuring spoons and cups
  • Whisk
  • Spatula
  • Nonstick pan or griddle

Directions:

  1. In a large bowl whisk together blue corn meal, all-purpose flour, baking soda, and salt.
  2. In a separate bowl, whisk together sugar, egg, milk, pumpkin puree, and pumpkin pie spice together.
  3. Slowly add wet ingredients to dry ingredients and mix together until smooth.
  1. Heat up griddle or pan to medium heat.
  2. Melt a little butter into griddle or pan.
  3. Using a 1/4 cup, scoop up batter and pour into pan. Batter will form a circle.
  4. Let cook until bubbles start to form at the top, then flip and cook until brown.
  5. Top pancakes with your choice of nuts or no nuts.
  6. Top with maple syrup or your choice of sweetener. Enjoy!

  1. One place to order blue corn products is Tocabe (I’m not affiliated, just a fan)– it’s a Native-owned company that sells Native foods, and they sell both Navajo Pride and Ute Mountain blue cornmeal. The Blue Corn mush already has juniper ash mixed in, which is nice.
