Fancy Navajo Spam & Potatoes

Hi friends! Today I am sharing a simple and easy recipe that makes me think about home. Growing up, the weekends were reserved for fancy breakfast feasts!! My mom would make homemade tortillas or biscuits and make some fried potatoes with spam.

The two combinations are by far my most favorite comfort foods of all time. Since we are practicing social distancing, I haven’t been able to see my mom as much. So, making this on the weekends makes me feel closer to home. My husband likes to call it Julie’s breakfast, which is my mom’s name.

This breakfast staple only requires a few ingredients of oil, salt, pepper, potatoes, and spam. You can certainly leave out the SPAM or opt for tofu, bacon, and sausage to suit your preferences. Besides SPAM, corned beef and ground beef are the front runners to this pairing. It’s definitely a once in a while treat and the crispier the meat and potatoes the better. Anyone else love SPAM and potatoes?

One other thing I love about SPAM and potatoes is learning how to make it. It’s such a simple dish, yet my favorite memory is seeing my Fancy Navajo mom, grandma, and aunts slice the potatoes with only a paring knife and their hands!! They are seriously some of the fanciest women I know!!

As a kid, it was so intriguing!! Were they going to slice their fingers??? Once I was old enough to use a knife, I remembering trying this the first time and I vowed to always cut potatoes like this to impress everyone I knew. Sometimes I get lazy these days and whip out my cutting board and knife. But when I am feely super fancy I bring out this old trick! Ha!

Fancy Navajo Spam and Potatoes Recipe

Yields: 2-3 Servings

Ingredients:

  • 3 medium to large russet potatoes, peeled and sliced into 1/8 in slices about 2 inches in width
  • 1 half can of SPAM diced into cubes
  • 2 teaspoons of olive oil
  • Salt and Pepper to taste

Directions:

  1. In a medium sized skillet heat pan on medium high and add olive oil, salt, and pepper to pan
  2. Slowly add in sliced potatoes and stir, let cook for 10 minutes on medium high
  3. Add in SPAM and cook for an additional 10 minutes or until potatoes are soft
  4. Serve with biscuits or tortillas! My recipe is here.
