Fancy Navajo – Yellow Corn Salsa Recipe

Today I am sharing an easy recipe for yellow corn salsa. If you like salsa as much as I do, then you are going to love this recipe!! I grew up in New Mexico, where almost every meal begins with chips and salsa. It’s my favorite part of any New Mexican meal!! Hahaha… So, it’s often difficult for me to get past my usual tomato-based salsa for any other type of salsa. However, recently I have become obsessed with yellow corn salsa!

So much so, I don’t miss my red salsa….

For this recipe you are going to need fresh yellow corn, but you can easily substitute for whatever fresh corn you have on hand. BUT, it must be FRESH CORN. I’ve tried canned corn and it’s just not the same. The fresh corn also needs to be cooked/grilled. Preferably grilled, as the char on the corn provides added flavor to the salsa!

I am not a super griller, so for this recipe I like to fake “grill” my corn. For this, I use a cast iron skillet and set my stove to medium high and cook the corn for 10 minutes, rotating after every 2 minutes. Voila instantly charred corn! All while avoiding the 110-degree heat here in central Arizona.

If you like spicy, add more chilis. I used 4 jalapeños and it was the perfect amount of heat. Not too much, but not too little. You can also substitute with whatever chili you prefer. Now that it is green chile season, I am going to try a version of this salsa with roasted green chiles. YUM!! Doesn’t that sound delicious?!

Fancy Navajo – Yellow Corn Salsa Recipe

Yields: 3-4 cups of salsa

Ingredients:

  • 4 ears of FRESH yellow corn, cooked (preferably grilled)
  • 1 red bell pepper, diced
  • 2 Roma tomatoes, diced
  • Half a red onion, diced
  • 2-4 jalapeños, diced
  • 1/4 cup of cilantro, diced
  • 2 limes, juiced
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 tablespoon garlic powder
  • Salt and Pepper to taste

Directions:

  1. In a skillet or grill, cook corn until nice and tender and let cool
  2. Dice all your vegetables and transfer to a large bowl
  3. Once corn is cool to the touch, carefully cut off corn kernels from cob and transfer them to a large bowl
  4. Add in all spices, lime, apple cider vinegar, and thoroughly mix.
  5. Add salt and pepper to taste
  6. Best served cold with some tortilla chips
