Recreating New Mexico Piñon Coffee’s Biscochito Latte

If there is one thing you should know about me, I LOVE coffee. But not just any coffee, New Mexico Piñon Coffee. It must be my New Mexican roots, but I cannot get enough of this delicious piñon coffee. I love waking up every morning to brew their traditional piñon coffee roast, and it is my little taste of home each day. I am beyond thrilled to be partnering with New Mexico Piñon Coffee to share how I recreated their signature Biscochito Latte using their new Cold Brew Concentrate.

First of all, why is New Mexico Piñon coffee my absolute FAVORITE????

One it combines two of my favorites, coffee and piñons. To those unfamiliar with piñons they are pine nuts that are special to New Mexico. Growing up I remember going piñon picking with my family and it was always a race to see who picked the most. Not only do these nuts taste delicious, they are a summer staple. I love stocking up on piñons when they are season.  The wonderful people at New Mexico Piñon Coffee fused my two favorites to make, piñon coffee.  If you have never had New Mexico Piñon coffee it is a mild tasting coffee with a delicious piñon flavor. I love that it is not bitter tasting and I crave it any time of the day.

I usually stock up at a local restaurant supply store when I go back home to New Mexico, but if I can’t, then I simply buy it from their online store. However New Mexico Piñon coffee has made its way into grocery stores around the country such as Sprouts, World Market, and Costco. I love it when you send me pictures of your most recent New Mexico Piñon coffee sightings. It’s like a little treasure hunt. Have you seen New Mexico Piñon coffee at your local stores? I was so excited to try New Mexico Piñon Coffee Cold Brew Concentrate!! Not only is cold brew less acidic than your traditional way of making coffee, it is the perfect drink on a warm spring day. The best part, the Cold Brew Concentrate is available for purchase on their online store!! Since the cold brew is in a concentrate form, you can make a delicious cup of coffee in a matter of seconds. This also allows for easy shipping and all you have to do is add water to the concentrate (1:2 ratio).

If you ever find yourself in Albuquerque, New Mexico, you have to visit the New Mexico Piñon Coffee House!!! Here you can try their famous piñon coffee along with a selection of fancy lattes like their famous Biscochito Latte. This is my go-to drink anytime I stop by. It’s basically New Mexico in a cup. I wish there was a New Mexico Piñon Coffee house here in Arizona, so until then I am excited to make my own at home using their Cold Brew Concentrate! And since I’m sharing my recipe you can make one too!

If you are not from New Mexico, you are probably asking yourself what is a biscochito?

Well for starters it is the New Mexico state cookie. Yeah, my home state has a state cookie!! I wonder if Arizona has one? I’ll have to look that up later. Biscochito cookie are traditionally served around the holidays like Christmas. It’s like a butter cookie with the star being the anise. The anise gives the cookie a licorice like flavor that is like no other cookie. It is then topped with cinnamon sugar to make them glisten! It is definitely a decadent cookie that reminds me of home and the holidays.

My brother makes the most delicious biscochitos around the holidays. However, as much as I begged and pleaded for the recipe, he would not budge. So, I used this recipe by Some the Wiser to make biscochito cookies. Rather than cutting them in their traditional scalloped edge shape, I wanted to blend my home state with my current state by making cacti shaped biscochitos. They came out so cute! If you are not in a baking mood, this recipe would also taste great with any cookie. The possibilities are endless.

I am beyond impressed with the quality of the New Mexico Piñon Coffee Cold Brew Concentrate, and I completely fell in love with the packaging. It comes in the fanciest jug. The Cold Brew Concentrate tasted just like my freshly brewed coffee, but literally only took a few seconds to make. I also didn’t have to wait for it to cool to enjoy!! I am excited to experiment with the Cold Brew Concentrate in baking and trying out new drink recipes.

New Mexico Piñon Coffee Biscochito Latte Recipe

Ingredients:

Directions:

  1. In a blender add in 1 to 2 crushed biscochito cookies, New Mexico Piñon Coffee Cold Brew Concentrate, Almond Milk, Water, and Honey
  2. Blend until smooth and cookies are dissolved, about 2 minutes
  3. Pour into an 8oz glass
  4. Sprinkle cinnamon on top and enjoy!

    At the Albuquerque Costco’s, New Mexico Piñon occasionally shows their products and provides samples. Their showcase prices are considerably lower than retail. I usually pick up the 5 lbs. bag.
