Do you have guests in town for the weekend? If so, impress them with this simple Fancy Navajo Slow Cooker Green Chile Pork recipe. It’s one of my go to recipes when I have guests in town. It only takes a few minutes to prep and the best part, it cooks while you sleep!!! That way you can enjoy more time with your family friends and not worry about what to cook in the morning.
Fancy Navajo slow cooker green chile pork is one of the most requested meals by my family.
I tell them if they want it, they have to visit me more!! Hahaha!! It is now our Christmas morning breakfast tradition. Even though Christmas is my birthday, it’s so easy to put together, I don’t mind putting it together the night before.
I am warning you now… your house will smell sooooo wonderfully delicious when you wake up!!! It must be the New Mexico gal in me, but there is no greater smell than Fancy Navajo green chile pork cooking in the air!!!
I mean who wouldn’t want to wake up to the smell of green chile.
This recipe is so versatile and can be eaten alone as a soup or used as a filling for burritos. Either way it is delicious. It also makes for a good filling for enchiladas or as a topping to your favorite foods.
To make this recipe even more simple in the mornings, I opt for premade tortillas. My favorite being Tortilla Land tortillas, which can be found in the refrigerated section next to the dairy. They are uncooked tortillas that you heat up on a skillet. These are the closest tasting to homemade tortillas that I have found. However, if you have the time, you can never go wrong with homemade tortillas. Here is my recipe for Fancy Navajo Magic Dough.

Fancy Navajo Slow Cooker Green Chile Pork Recipe
Yields 6-8 servings
Ingredients:
- 2 lbs. of Pork Loin/ Roast, chopped in 1-inch cubes
- 3 to 4 Potatoes, sliced
- 2 15oz cans of Hatch Green Chile Enchilada Sauce or Green Chile Enchilada sauce of your choice
- ½ Tablespoon of Garlic Powder
- ½ Tablespoon of dried Oregano
- Salt and Pepper to taste
- Optional – Chopped Green Chiles or Onions
- Slow cooker
Instructions:
- Combine all ingredients into your slow cooker
- Turn on slow cooker to LOW for 6-8 hours or HIGH for 4-5 Hours
- Occasionally stir ingredients in slow cooker
- Serve with tortillas and scrambled eggs, or use to make a filling for a burrito
- Enjoy!
