Lately I have been going down memory and revisiting past recipes like my Cha Cha Chia Seed Pudding recipe from 2015. It was fun to see previous work and I was going to retake the photos, but I like having those photos there. They serve as a memory of where I started and how my photography style has changed.
So instead today, I will be revamping my Cha Cha Chia Seed Pudding recipe slightly. If you want to see the original recipe head here.
On a recent trip home, I wanted to make a fancy and healthy dessert for my family. It was toward then end of winter in New Mexico, but my mom and I were craving something fruity. So as a way to celebrate the change of season, I thought why not make some chia seed pudding. Instead of using yogurt and milk, I decided on Coconut Milk as the base. I really enjoyed the slight change in flavors and it tasted so refreshing!
If you have never had chia seeds before, they offer a nice little jelly contrast to your pudding. Kind of like, tapioca balls in Boba Tea. They also provide a lot of health benefits.
Chia Seed pudding is also really simple to make. It’s literally just mixing everything in a bowl and letting it sit your refrigerator for a few hours or overnight. It makes for the perfect breakfast, especially if you need a break from your usual yogurt.
You can top your Coconut Chia Seed pudding with a variety of toppings like fruit, granola, or even coconut shavings. It’s a nice little dessert that doesn’t have a lot of sugar but has loads of flavor. It will sure make your guests feel fancy!

Fancy Navajo Coconut Chia Seed Pudding Recipe
Yields: 4 Servings
Ingredients:
- 3 Tablespoons of Chia Seeds
- 1 can of Coconut Milk 13.5 fl oz (you can substitute with the light version)
- A splash of Vanilla Extract
- Optional Toppings: Fresh fruit, granola, or coconut shavings
Directions:
- In a medium sized bowl add in chia seeds.
- Slowly add in Coconut Milk
- Add a splash of Vanilla Extract
- Mix all of the ingredients until fully incorporated
- Cover and let sit in the refrigerator for at least 2 hours or overnight or until mixture is a pudding like texture
- Makes 4 servings, top with your toppings of choice
