  1. Hello from New Mexico ☺️. Looked up Navajo style biscuits and I just finished watching the spam and potatoes with biscuits video. I’ve never made the biscuits on my own and loved the way shi masani them. Thanks to your video I have new inspiration for breakfast this morning. I already am inspired to watch more content on your channel. Nizhoni!

  2. Hi Alana, I’m so happy to find you! It’s taking me a long time to move back to the southwest and I crave personal content like yours. I can pretend, for a minute, that I’m there.

I have a couple of points to get your feedback on.

First, have you seen Babette’s Feast? I don’t know if I could watch it now because I love animals alive, but there’s a foodie movie for you.

Second, I’m sure you’ve had pinon (I’ve got to figure out how to get the tilde) coffee made with the actual nut so was it much of a letdown to drink it made with flavoring? I’ve been thinking about ordering New Mexico Pinon Coffee, but the flavorings issue always makes me hesitate. I’m tempted by the Biscochito, Adobe Morning and Mexican Spiced Chocolate but…. So what do you think?

    Thank you for your efforts!

    1. Hi there!! Yay!! That is great to hear! Welcome! I have not seen that movie, but now that you recommended it. I will have to check it out. I love New Mexico Piñon Coffee. The traditional is my every day coffee. I have a couple of posts about them. Since piñons are not commercially produced they have to use the piñon flavoring. I love it!! Adobe Morning is my second favorite next to the traditional coffee. Enjoy!

  3. Just took the results of your BAGEL recipe and method of preparation out of the oven. I loved the way you instructed to mix the dough for a full 10 minutes with my stand mixer. I’ve tried some other methods and this, by far, was the easiest and most efficient and effective. By using a smaller batch recipe, was able to use the smaller mixing bowl. Amazingly, before it got to that 10 minutes, it had just about wiped that bowl clean. The dough wasn’t sticky and the gluten was beautifully stretched and strengthened. You are definitely one very smart home chef. Other instructions, including those on the King Arthur Baking website, instruct us to cook the dough calls for less time. The 2 minutes per side gave better results. The very best TIP was to drain the cooked dough on folded tea towels. I was calling that draining process all kinds of names, in 3 different languages, due to the royal pain of putting them on parchment paper and struggling to get them off and into the water plus draining on a cooling rack. Grrrrr ~~~ 🤣🤭😂. I did the cornmeal piles on the silicone baking mat and that went okay but won’t do that next time because of personal preference. Didn’t paint the tops with the egg white wash this time because I want to evaluate how well they’ll make a breakfast sandwich without, for a change. All in all, your recipe and methods are the absolute best of all I’ve used. As for the others, it’s game over. From now on, am sticking to my favorite Navajo baking mentor.

Suggestion: Regarding your YouTube video. It was a bit difficult to view because the person who did the filming had whatever phone or camera turned the wrong way and, on screen, for your viewers, it was very narrow. Ask that person to turn the phone or camera sideways, that’s a LANDSCAPE view. They had the vertical, up and down, portrait view version. I really love your style, all your Blue Corn recipes. Your delightful personality comes through all your social media posts and I love everything you do. Now, if possible, start writing your COOKBOOK with color photos. I’ll buy it and will probably buy more for special gifts. Additionally, would be delighted to help you promote the cookbook on all my social media pages. Photos of my Bagels will be on Instagram
