Hi Friends! Today I am sharing a simple and easy recipe for blue corn donuts, but these aren’t just any donuts, these are Fancy MINI Blue Corn Donuts. I don’t know about you but anything mini sounds 10x more delicious!! I love this bite sized dessert that can be eaten any time of the day. However, my favorite way to eat these mini blue corn donuts is plain with a hot cup of Piñon coffee. Yum!
One of my favorite memories of mini donuts was when I was in college in Milwaukee, WI.
My college friends and I went to Indian Summer which is this end of summer outdoor festival honoring Indigenous culture and music in the Midwest. It was a fun way to introduce my non-Native friends to Indigenous culture. At the end the evening we sat along Lake Michigan and watched fireworks while eating mini donuts. It soon became a tradition every start of the new school year for my friends and I. We would grab an Indian Taco, listen to music, and then enjoy the evening eating mini donuts.
Although these mini donuts we shared in college were your typical fried mini donuts, I wanted to make a Fancy Navajo twist to to them. Of course that meant adding in my favorite, Blue Corn Meal!! Also instead of frying, these donuts are baked. This is what allows the recipe to be simple and easy. You can also use this recipe to make full sized Blue Corn Donuts.
Either way, mini Blue Corn Donuts are the perfect bite sized treat to share with friends
This recipe will require you to use a donut pan, there are variety of donut pans to purchase online. This is the one I used for this recipe here. Make sure to spray generously with non-stick spray before pouring in the batter.
These mini blue corn donuts can be eaten plain or with a dipping sauce. At the bottom of the recipe we have shared a whipped honey and glaze topping recipe.

Fancy Mini Blue Corn Donuts Recipe
Yields: 24 mini donuts
Ingredients:
- 1 cup roasted Blue Cornmeal
- 1/2 teaspoon Juniper Ash
- 1/2 cup All-Purpose Flour
- 1/3 cup Granulated Sugar
- 1 ½ teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup Milk
- 1 Egg
- 3 tablespoons Vegetable Oil
Supplies
- Donut pan
- Non-stick spray
- Whisk
- Medium or Large bowl
Directions:
- Preheat oven to 350 ° F. Spray donut pan with non-stick spray and set aside.
- In a bowl, combine dry ingredients, blue cornmeal, flour, sugar, baking powder, juniper ash, and salt. Whisk them together.
- Add milk, egg and oil to the dry ingredients and whisk together. Batter should have the consistency of pancake or cake batter.Â
- Dispense batter into donut pan cavities. Fill 3/4’s from the top.
- Bake for 8-10 minutes. Check that the donuts are cooked by poking one with a toothpick or knife. Toothpick or knife should come out clean from the donut.
- Take the donuts out of the oven and let them cool.
Donut Bling – Icing Options
Oh Honey! These donuts pair excellently with honey. Using whipped honey makes the donuts extra fancy. If you don’t have whipped honey, you can make a good substitute by combining about 1 cup of honey with 1 teaspoon of cornstarch. Drizzle the icing over your donuts, to taste.
Glazed and Confused… You can make a simple donut glaze by combining 2 cups of powdered sugar with 1 teaspoon of vanilla extract and 1/4 cup of milk. Combine in a saucepan set on warm heat. Remove the glaze from the heat and let it cool. Dip donuts into the cool glaze.
