Hi friends! It’s officially my favorite time of year, Hatch green chile season. Being from New Mexico, green chile is basically part of my daily life. I pretty much add it to everything I eat. Around this time of year, Hatch green chiles are ready to pick and the best part, they are ready for ROASTING!!!
There is no better smell than freshly roasted green chiles.
It’s so fragrant and a reminder that fall will be here soon. Since I live in Arizona, it’s something I miss so much. Usually I have to make a special trip home to New Mexico and stock up. But I recently went to my local grocery store (Fry’s Food Stores) and was surprised to see they were roasting Hatch green chiles!! My mouth instantly watered and purchased chile to take home.
One of my favorite Hatch green chile dishes to make is Fancy Green Chile Stew. I love it because it’s a simple and easy way to use those delicious green chiles. It also reminds me of being back home in New Mexico. Today I’ll be sharing this recipe and I hope you give it a try.

Fancy Green Chile Stew Recipe
Yields: 8-10 servings
Ingredients:
•1lb of ground beef
•1 medium white onion, diced
•4 garlic cloves, minced
•3-4 medium potatoes, peeled and diced
•14.5 oz canned diced tomatoesÂ
•1 cup of roasted Hatch green chiles, choppedÂ
•32oz beef brothÂ
*Salt and pepper to taste
Instructions:
- In a large pot, brown ground beef
- Add in garlic and onions and sauté until tender
- Add in potatoes and beef broth and let cook on medium heat for 20 minutes
- Add in canned tomatoes and green chiles and let cook for 15 minutes or until potatoes are cooked throughÂ
- Enjoy!Â
