Fancy Blue Corn Scones Recipe

Father’s day will be here soon and today I am sharing a fun and easy recipe for Fancy Blue Corn Scones. My husband looooves scones and he always asks to make these. Usually his favorite type of scones are oatmeal or blueberry scones, but I wanted to change things up a bit. So for Father’s Day I will be making him Blue Corn Scones. I think they will be the perfect treat!

If you didn’t know, scones are sooo simple to make.

Essentially they are like biscuits but with more sweetness added to them. They have nice flaky layers and they pair well with coffee or tea. Scones only require a few ingredients and once you have nailed down a basic scone recipe, you can change it up by adding in fun flavors like fruit, nuts, or jams.

This recipe is a basic blue corn scone recipe.

So once you nail this recipe down, you can add all sorts of things to it. I can imagine this recipe would be great with roasted piñons (pine nuts) or strawberry jam. For this recipe, I kept it simple and added a basic icing . The possibilities are endless and you’ll have to share any fun additions you make to your Fancy Blue Corn Scones.

I personally like large scones and this recipe makes 6 large scones. However, you can double the amount of scones by making smaller scones. I think this would be the perfect bite sized scone treat throughout the day or small treat for you little one.

Just a few tips for making these Fancy Blue Corn Scones.

  • Make sure your butter and heavy cream are COLD! This ensures you have nice flaky scone layers.
  • If you don’t have access to juniper ash, you can use 1 1/2 teaspoons of baking powder instead.
  • Don’t knead or work with the dough too much. You just need to gently fold in the ingredients a few times.
  • Try to work quickly so your butter doesn’t start to melt into the dough. If that happens place scones in the refrigerator for 10-15 before baking.
  • Depending on how thick you roll out your scones, you may need to bake longer.

Fancy Blue Corn Scone Recipe

Yields: 6 Large Scones

Ingredients:

  • 1 cup all-purpose flour
  • 1 ½ cup roasted blue cornmeal
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon juniper ash (No juniper ash, then use 1 ½ teaspoon baking powder)
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold
  • ½ cup heavy whipping cream, cold plus
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional – ¼ heavy whipping cream and ¼ cup cane sugar

Directions:

  1. Preheat oven to 375 degrees F and line baking sheet with parchment paper or foil
  2. In a medium sized bowl combine flour, blue cornmeal, sugar, baking powder, juniper ash, and salt and give it a good mix
  3. In a small bowl add whipping cream, egg, and vanilla extract and whisk together until combined and set aside
  4. Slice butter into thin slices and add into dry mixture and mix with clean hands until butter is in small pea sized shapes
  5. Pour whipping cream mixture into the dry butter mixture and combine together with a spatula
  6. Place dough on a lightly floured countertop and spread out dough into a 6-inch disk with a 1-inch thickness and cut into 6 triangle pieces
  7. Optional – Lightly brush scones with heavy whipping cream and sprinkle cane sugar on the top
  8. Transfer scones to baking sheet and bake for 14-16 minutes or until they start to turn slightly brown on the bottom

Quick Scone Icing – In a small bowl, add 1/4 cup of powdered sugar and 3-4 tablespoons of heavy whipping cream. Whisk together ingredients until you have the desired icing consistency. If you want a lighter icing then add in more heavy whipping cream. Drizzle over your Fancy Blue Corn Scones.
