Yá’át’ééh friends! Today you are in for a sweet treat! Ya’ll know I loooove breakfast and when I am feeling extra fancy I like to make Fancy Blue Corn Crepes. I like to think of them as the fancier version of pancakes. So light and thin, and the beautiful blue color puts a smile on your face.
You might be thinking that sounds too fancy, but let me tell you. These are so simple and easy to make. All you have to do is just blend everything up in your food processor/blender and you are good to go! You might just even sub this for your usual Sunday pancakes.
This recipe actually came together by accident. One morning I wanted to make pancakes but didn’t have any milk on hand. We don’t drink milk a lot, but we almost always have heavy cream. Problem was, we only had about ¼ cup of heavy cream on hand. Oh no!
I am known for always not having all the ingredients, but I love finding ways to substitute ingredients. So, one trick I have is substituting heavy cream when milk is called for in a recipe. I just dilute the heavy cream with water depending on the milk consistency I want. Sometimes it creates tasty creations like this one.
You can certainly use 1 cup of milk for this recipe, but I found the heavy cream adds another layer of flavor that makes this taste fancier. You can also make these crepes savory by excluding the granulated sugar for the recipe. But I enjoy these Fancy Blue Crepes sweet and I like to add my favorite berry compote (recipe linked here) and dusting it with powdered sugar.
The only thing tricky about this recipe is the pan.
I use a crepe pan that was made specifically for crepes. It has great nonstick surface that makes it so easy to make these crepes (It also makes a great tortilla pan too). So make sure to use a good nonstick pan. If you don’t have one, just make sure to spray or butter your pan generously beforehand. I purchased my pan from TJ Maxx and I see them often at discount stores like TJ Maxx and Ross.

Fancy Blue Corn Crepes Recipe
Yields: 8 crepes
Ingredients:
- ¼ cup roasted blue corn
- ¾ cup all-purpose flour
- 1 tbsp granulated sugar
- ¼ cup heavy cream
- ¾ cup water
- 2 eggs
- 2 tbsp melted unsalted butter, cooled
- Pinch of salt
Equipment:
- Food processor or blender
- Crepe pan or a good non-stick pan
Directions:
- In a food processor or blender combine all ingredients until equally combined
- On a medium heat, warm up crepe pan
- Ladle out ¼ cup batter and pour into the center of pan. Quickly lift pan from heat and evenly spread out batter so that crepe spreads out about 6-7 inches wide.
- Once bubbles start to form in the center of the crepe (about 1-2 minutes), flip over and cook the other side for 30-60 seconds.
- Serve alone or with your favorite syrup
