Now that we have been spending more time at home these days. I have been finding ways to keep myself occupied. One of my guilty pleasures is an iced cinnamon dolce latte from Starbucks as an afternoon treat. However, I can’t justify a visit to my local coffee shop during this time. So, I started making my own fancy coffee drinks at home. Today, I’ll be sharing my recipe for a fancy iced cinnamon dolce syrup that will elevate any simple coffee to a fancy coffee.
It’s all in the syrup…
It’s a simple recipe using items you may already have in your pantry. If you have sugar, cinnamon, and water on hand then you have all the ingredients needed to make your very own Cinnamon Dolce syrup. I love this combination with coffee as it gives hints of fall and winter, but putting the latte on ice gives it a cool spring touch.
You can also use the syrup on pancakes or waffles.
You are probably thinking, why not just buy a creamer or syrup online? I totally could, but since my husband has food allergies, a lot of coffee creamers and syrups have gum in it. I love making afternoon treats for the both of us now that we are home and I want to be able to share this with him. So I take a little extra time to make things from scratch.
For this recipe, I wanted to make a light syrup.
I am not much of a sweet coffee person, so this isn’t overwhelmingly sweet. But if you wanted to make a thicker syrup you can either reduce the amount of water to ¾ cup or add in an extra ¼ cup of white sugar. For a sugar free, option you can also use a sugar substitute. I would suggest reducing the water content to ¾ cup if you want to do this.
I like storing my syrup in a glass jar in my refrigerator and it will keep for about 1-2 weeks. You can add it to your regular cup of coffee or make your own latte with almond milk. Here is my recipe if you want to give it a try here. Sometimes I like adding it to baked goods and of course my favorite as a topping for waffles. The uses for the cinnamon dolce syrup are endless and just typing this out, it would be a good topping on ice cream. Yum!

Fancy Iced Cinnamon Dolce Latte
Yields: 1 cup of syrup
Ingredients:
- 1 cup water
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 tablespoon of vanilla extract
- 3 cinnamon sticks or 1 ½ teaspoons ground cinnamon plus extra ground cinnamon for dusting
- 1/2 cup Espresso or coffee
- 1/2 cup Almond Milk
- Cup full of Ice
Directions:
- In a small sauce pan add in water, sugars, cinnamon, and vanilla. Gently whisk together on a medium heat.
- Let boil for 5-8 minutes until you get a light syrup consistency.
- Remove from the heat and let cool for 15-30 minutes. ***Please make sure syrup cools completely before transferring***
- Pour syrup into a container of your choice and store in the refrigerator until use.
- Prepare espresso. I like using Café Bustelo
- In a large glass fill with ice cubes and spoon in cinnamon dolce syrup to your liking
- Fill the glass half way with almond milk
- Fill the rest of the glass with espresso
- Mix together and sprinkle with cinnamon
- Voila, enjoy!
